Whole cluster double pressed. We gently pressed once then added the juice back to extract more aromatics. Fermented spontaneously in a concrete tank then was bottled while it was still fermenting. A cool snapshot of the day the grapes were picked. Disgorged in two batches in November 2022 and May 2023.

Crisp and aromatic with a bright acidity. Passion fruit, sweet tart, melon, lemon peel, tasty rocks.
Vineyard Notes
Planted in the early 2000's with Pinot Noir (115, 667), Sauvignon Blanc and Syrah, the Waters & Banks Vineyard is owned and cared for by, retired doctor and retired nurse, and namesake owners Terry Waters and Cathy Banks. The property neighbours the south side of our winery and is so close in proximity that it's barely distinguishable from our Elysia vines.
